Nestled at 1,660 feet above sea level in the heart of Hawai‘i’s Kona coffee belt, Monarch Coffee is a small, family-run estate where world-class coffee is grown in rich volcanic soil under sunny skies and cool mountain breezes — in short, coffee paradise.
First started by Greg and Susy Stille, it is now run by their daughter Abby and her husband, Sal Muñoz, who carry on their legacy with heart, innovation, and hands-on care. Sal runs farm operations, keeping the plants and soil healthy, coordinating harvests, and maintaining equipment. Abby, a certified Q Grader and post-harvest expert, focuses on making sure every batch of coffee achieves its full potential and leads the post-harvest process with a sharp focus on flavor and quality.

In December 2024, our coffee buying team earned their Coffee Quality Institute (CQI) professional certification in Post-Harvest Processing through an intensive 6-day course at Monarch Farms in Kona, Hawai’i. This exposure allowed them to work alongside and experience some of the most special coffee they had ever tasted from Hawai’i, all produced by Monarch Farms.
The class itself was incredibly impactful and delved deep into the chemistry of fermentation, tool calibration, how to determine capacity bottlenecks, and included hands-on picking and processing of five 35lb batches. It showcased how producing regions in any part of the world can use post-harvest methods to help mitigate certain climate change challenges and expand a portfolio when varieties are limited. However, what stood out the most was how Monarch Farms produces with purpose — by respecting the land, working in small batches, and paying close attention to every step.

Through participation in this course, our team developed a friendship with Abby and Sal and felt that Coava absolutely needed to share the magic of what they do with our customers. We have purchased these two small and incredibly exclusive lots that we hope you have the chance to experience.
Monarch's coffee comes from two special varietals: Geisha and Pacamara, both handpicked at peak ripeness. They then use several methods to process their coffee: washed with 36-hr anaerobic fermentation; honey; whole-fruit natural; and experimental lots that include extended fermentation, carbonic maceration, and a “hydro honey” process that they pioneered.
We are extremely excited to present this limited release set which features both Geisha and Pacamara varietals.
